Easy But Fancy Raspberry Trifle

Whenever I think about trifle I think of the one Rachel made in Friends. I felt so sorry for her! I love trifles. They are so delicious with the various components. Beautiful layers of yummyness one on top of the other. Who doesn't like them? The recipe for trifle I often use is a foolproof one that even Rachel couldn't mess up. Here's what you'll need:

6 egg cakes                                                      125ml whipped cream
50 ml of raspberry syrup
250g raspberries
450g vanilla quark
1 tbsp icing sugar
6 leaves mint

Cover the bottom of the serving dish with half of the egg cake pieces, drizzled in the rasberry syrup. Scoop layer by layer the half of the vanilla quark, a quarter of the raspberries, half of the whipped cream and the second quarter of the raspberries on. Spread the rest of the egg cakes on top and scoop out the rest of the curd, the third quarter of raspberries and the rest of the whipped cream. Than finally distribute the rest of the raspberries evenly on top. Try to create nice visible layers so your trifle will look pretty. 

Put the trifle in the refrigerator for at least 1 hour so the flavors can blend well. Just before serving, garnish with mint leaves and sprinkle with powdered sugar.

Now if you're not familiar with egg cakes, they are these round flat cakes that are about the size of your hand palm. So don't throw 6 actual cakes in there! If you can't find egg cakes where you live, you could use about 6 slices of hotel cake or pound cake. It would taste just as good!

Whenever I want to make something fancy but don't have a lot of time I always return to this recipe. It's full of flavor, so fresh and sweet  with a little tang from the raspberries. It looks so beautiful when served in a nice dish.
