Pretty Cute Mini Cupcakes


Today I'm going to a friends' dinner party. As it's a themed dinner party she asked us all to dress in pink or blue pastels. I love pastels! It immediately inspired me to baked some goodies to bring along. I baked some delicious mini vanilla cupcakes with vanilla butter cream frosting and raspberry frosting. I added some blue food coloring to the vanilla frosting and a bit of pink food coloring to the the raspberry frosting. The white ones are also vanilla. I sprinkled some sugar pearls to give it an elegant finish. I love how these turned out! I used my basic vanilla cupcake and frosting recipes. This recipe makes 12 normal sized cupcakes or 24 mini cupcakes.

Here's what you'll need:
-125 grams of butter at room temperature
-125 grams of granulated sugar

-2 eggs at room temperature
-125 grams of self raising flour
-2 Tblsp milk at room temperature



Preheat the oven to 170 degrees. Line a 24-hole mini muffin tin (or a 12-hole normal sized muffin tin) with paper cases.

Cut the butter into small cubes. Put the cubes in a mixing bowl and mix at medium speed. Add the sugar a little bit at a time. As soon as you mix becomes light and fluffy, add the eggs, one at a time. Keep mixing at medium speed. Now you add the self raising flower. Again, a little bit at a time, and in the meantime, keep mixing. Lastly add in the milk. 

Take your muffin pan with the paper cases and fill them till about 2/3. Put them in the oven until they're golden brown. For normal sized cupcakes it'll take about 20-25 minutes. These mini cupcakes take about 10-15 minutes. 

When your cupcakes are done, leave them in the pan to cool for about 10 minutes. Than take the cupcakes out and put them on a rack until they're completely cooled off. If you put the icing on a warm cupcakes it'll melt right off. 

 While you let the cupcakes cool off, you can make the frosting. 

This is what you'll need:
-250 grams of butter at room temperature
-250 grams of confectioners sugar
-1 tblsp of hot water


Beat the butter at medium speed until it's light and fluffy. Add in the confectioners sugar in 2 stages. Add in the water and mix again for about 2 minutes at medium speed. At this point you can add any flavor you want. I added 2 tsp of vanilla essence for my vanilla frosting. For my raspberry frosting I added some raspberry flavoring. Easy as that.

I put the frosting in a piping bag and used an open star tip (Wilton 1M). This gave me the perfect swirl.
